I had an excellent culinary experience at Sens last Saturday. It's a restaurant that has never disappointed me, both in terms of the quality and presentation of its dishes and the relevance of its wine selection. I started with an appetizer combining smoked eel—whose briny flavor was perfectly balanced—with a carrot flan accompanied by a delicious shellfish jus. The Alsatian Pinot Gris on the menu paired wonderfully with this starter: its slight bitterness balanced the briny notes of the eel while enhancing the creaminess of the carrot flan. My companion also offered me a taste of their appetizer, a particularly well-prepared and perfectly cooked fresh foie gras. I highly recommend choosing this dish, and do so now, as it's one of the new additions to the menu. The chef offers a beautiful surf-and-turf combination by pairing foie gras with crayfish. When the dish was announced to me, I was somewhat skeptical about the pairing, but the result was nonetheless remarkable! Neither element overpowered the other; each found its perfect place. Again, the pairing with the Alsatian Pinot Gris was superb: the richness in the mid-palate and the slight bitterness on the finish created a beautiful harmony of flavors. For my main course, I chose the octopus. If, like me, you appreciate this delicacy, you've probably rarely tasted it prepared this way. Cooking it on pine needles gives it a smoky dimension quite similar to great peaty Scotch whiskies. These aren't usually aromatic notes I particularly enjoy, but here, the squid ink sabayon perfectly balances this smoky character. The whole dish is exquisitely balanced. The dish was accompanied by fried polenta, both very original and incredibly delicious. The Alsatian Pinot Gris also worked beautifully with this dish, never masking its balance on the palate, which was both silky and harmonious. Its touch of bitterness and slight acidity on the finish gave it a lovely length. The wine list isn't particularly extensive, but it changes regularly, and the selections offered are always very well-suited to the dishes served. In my opinion, Le Sens is one of the best bistronomic restaurants in Bordeaux, with prices that are more than reasonable considering the quality. It's a place I find particularly cozy, where you're always warmly welcomed with a smile and attentive service. A last-minute reservation and what a wonderful surprise! Divine and original dishes, as beautiful as they were delicious...a delight from beginning to end...special mention for the vegetable tart...a work of art! Impeccable service, and even a visit from Lucie-Anne, the Chef, to our table to get our feedback on her creations! We'll be back again and again!

Everything was perfect. The meal flowed smoothly from the appetizer to the main course and dessert. The portions were generous and the taste was simply incredible. It was a wonderful discovery. I highly recommend it.

I had this for dinner on my last night in Bordeaux. The food was delicious, and although the wait for the dishes to be served was a bit long, everything else was truly excellent.

A perfect mix of price, variety, and flavor. Thank you to the team, the chef, and the head waitress for the attentive service at the end of the meal. Special mention for the floating island, which is the best dessert I've ever tasted. We'll definitely be back.

I had very fond memories of this restaurant from several years ago. Returning, the setting is still just as pleasant, and the servers are responsive and friendly. However, I was extremely disappointed with the quality of the food. While the dishes were well-presented, they lacked any real flavor and were bland. The same went for the wines, which, except for one glass out of the entire selection offered, were simply not up to standard. In short, this restaurant aims high with its decor, service, and presentation, but unfortunately falls far short in terms of the quality of its cuisine. A real shame.

Excellent birthday evening. Five-star service from all the staff. We enjoyed a wine tasting with expert knowledge. We will be back!
