We were extremely disappointed with our experience at Brutø. First, l'd like to say we have been there previously and absolutely loved it. It seems things have gone downhill. We were sat 30 minutes late (which they were very apologetic about) but it seemed like we were rushed the whole time. For example, twice a plate was removed while I was eating off of it. I might have been able to stop them removing it if my mouth wasn't full. When asking about the dishes being served we were confronted with lack of knowledge and short responses. Since we were sat late, they cleaned up not even half the way through our meal giving us the impression we were overstaying our welcome with 5 courses left. The staff seemed unengaged and completely out of sync. Apart from the service, the food and beverage pairing also missed its mark with really only two courses to write home about. I understand restaurants may have off evenings but for $800+ we expected much better, especially since it was so great the first time we visited.
From start to finish every course was well thought out and the pace of the dinner was perfect. We look forward to coming back!!
My expectations are actually pretty low for Michelin star restaurants. Interesting flavors are hard to come by. I went to Bruto, thinking the same and was unexpectedly surprised finding a menu focused on fermentation of foods. Each course came with the obligatory explanation of what we were eating and the tastes lived up to both the star and the price. The vibe was Michelin star standard fare, which is to say it was great. But that’s like saying Victoria’s Secret models are beautiful. True, but what’s on the inside is really what matters. And Bruto is definitely worth getting to know. The succulent plant in my photo was one of the more interesting dishes I’ve ever had. Love. Looking forward to returning and seeing what they have to offer with their next menu.
Very informed servers, really unique and fun food with awesome pairings, but- it took 3+ hours; each plate is a bite or two, each drink is a shot or less... and its $400 per person!! 400 and i left hungry
Have been twice and need to make another reservation soon. One of my favorite restaurants in Denver
