It is a very week in Bologna, Italy. The city is preparing to honor their Patron Saint, Saint Patronius. The city is packed with tourists and the restaurants are enjoying the bounty. My wife and I did not have a reservation in any restaurant. We tried several but were told they were sold out for the evening . As we continued to walk the many streets in the city we came to Ristorante Volando. We were greeted by a smiling young man named Dario who was happy to seat us. We chose outside seating. He walked us to our table, handed us menus, and ask if we wanted water which we asked for still water. It was chilled perfectly. My wife ordered Tagliatella al Ragù Bolognese. The pasta is made in house and was cooked Al dente, it was phenomenal. I ordered the Balanzoni. A traditional, large stuffed spinach pasta filled with ricotta, mortadella and Parmagiano-Reggiano. It was topped with a velvety cream sauce and topped with chopped pistachios. My new favorite pasta dish. It was to die for, you must try it!!! We also ordered meat stuffed zucchini in tomato sauce which we shared. All I can say is YUM YUM another must try, We shared two desserts, tiramisu and homemade Panna Cotta. My wife enjoyed a macchiato and I had a double espresso. It was a perfect ending to a perfect dining experience experience. I must recognize our sensational, professional outstanding server Dario. He truly made our dining experience one to remember for a very long time. He is truly an asset to this establishment and a benchmark to all servers should strive to be.
