When visiting a long-established restaurant in Cologne, the most touching aspect is often savoring the stories that time has woven into the food. Tonight, we visited Gaststätte Max Stark in Cologne's Old Town North. This restaurant boasts a rich history. Founded in 1889 by the same founder, Max Stark, it suffered severe damage during World War II, forcing it to close until 1953 when a temporary roof was finally erected. At the turn of the millennium, it revived, regaining its original name. Stepping through the door felt like stepping back in time: dark wood inlays, vintage chandeliers, and high ceilings, all bathed in a warm, golden light. We browsed the menu, selecting from traditional German dishes. The first course, asparagus soup, featured delicate asparagus pieces floating in a milky white broth. The moment it entered our mouths, the rich aroma of white asparagus filled our senses; the texture was thick and smooth, each bite a concentrated burst of asparagus sweetness. The main course was the highlight of the evening. The crispy, golden-brown pork chop, wrapped around tender, juicy pork, was perfectly balanced by the asparagus and hollandaise sauce. The steak was cooked to perfection, retaining its juiciness; while excellent, it lacked just a touch of surprise. After a satisfying meal, we shared our impressions: there was no loud music, only the clinking of glasses, casual conversation, and the rich, flavorful local beer. The waiters were friendly and humorous, and the "old-fashioned" practice of marking beer glasses with coasters added a touch of ritual to each refill. This place is both a restaurant and a still-operating traditional brewery. The authentic brewing experience, the simple and homely flavors, the generous portions, and the surprisingly affordable prices all contribute to the delightful experience. I highly recommend making a reservation in advance—this historic establishment is always popular. In short, at Max Stark, I tasted more than just food; I tasted the essence of Cologne life over the past century. Looking forward to my next visit.

Initially, I was a bit skeptical because the Max Stark Brauhaus doesn't exactly look like a typical brewery. But I can assure you, the food here is much better than in most other breweries. I had by far the best rump steak I've ever had. The meat was incredibly tender and perfectly cooked, just like the fried potatoes. The beer was also something special, something you don't find everywhere. I'm not usually a big fan of Kölsch beer, but this Päffgen is really very good. The service was also very quick and extremely courteous.

A lovely brewery with good Kölsch beer and delicious food. If you want a seat for your meal, be sure to reserve a few days in advance.

Yesterday I went to Max Stark with a friend, and it was simply fantastic. It's not a big brewery, but a very simple one, yet with a wonderful flair and charming atmosphere. I started with a small lentil soup, which was beautifully seasoned. We both then tried the Viennese veal schnitzel, and it was exceptionally tender and perfectly flavorful. The accompanying salads were incredibly fresh, and the dressing was divine. We'll definitely be back!
